Cabernet Sauvignon

Cabernet Sauvignon

Cabernet Sauvignon is the queen of red grape varieties: full-bodied, structured, and with a distinctive profile of dark berries, cassis, and subtle notes of cedar and tobacco. Its robust tannins and pronounced fruit make it ideal for long aging – and the heart of great blends around the globe.

Originally from Bordeaux , this grape variety now thrives from Napa Valley to Chile and Australia, constantly revealing new facets of its character. At Vinoscout, you'll discover over 490 wines that impressively reflect this diversity – from accessible entry-level wines starting at €2.70 to rare gems for discerning collectors.

Cabernet Sauvignon – the queen of red grape varieties

If there's one grape variety that has taken the wine world by storm, it's Cabernet Sauvignon . With well over 300,000 hectares under cultivation worldwide, it's the most widely planted red grape variety in the world – and at Vinoscout, with over 490 products, it's our largest category. Whether you're looking for an elegant Bordeaux blend, a powerful Californian, or a Tuscan superstar: you'll find your perfect Cabernet Sauvignon here.

Origin and history: From Bordeaux to the whole world

Cabernet Sauvignon originated in Bordeaux in southwestern France. Genetically, it is a natural cross between Cabernet Franc and Sauvignon Blanc – a combination that has given it both structure and aromatic depth. With approximately 54,000 hectares, France remains the most important growing country, closely followed by the USA.

But this grape variety has long since won over the world. In California, especially in Napa Valley, single-varietal wines of impressive opulence are produced. Tuscany has created its own interpretation with the so-called Super Toscani , which combines Bordeaux elegance with Italian warmth. Cabernet Sauvignon is also cultivated with great success in Chile, Australia, South Africa, and – as our bestseller list shows – in the German Palatinate and the Portuguese Alentejo. This late-ripening variety prefers warmer climates where it can fully develop its tannins.

Flavor profile: structure, fruit and depth

What makes a good Cabernet Sauvignon? Above all, its unmistakable aromatics and its backbone of ripe tannins. In the glass, it displays a deep red to ruby red color, and on the palate, it unfolds a broad spectrum:

  • Blackcurrant – the classic leitmotif, fruity and precise
  • Green peppers and herbs – a touch of freshness, especially in cooler climates.
  • Licorice and dark berries – typical of younger, powerful vintages
  • Vanilla, cedarwood and tobacco – the result of barrel aging.
  • Paprika and leather on the finish – a sign of mature, complex wines.

Traditionally, Cabernet Sauvignon is aged for 15 to 18 months in oak barrels (barriques). The winemaker can precisely control how much oak influence the wine absorbs and how well the tannins are integrated. Younger wines delight with notes of licorice and vibrant fruit, while older vintages exhibit a fascinating evolution towards bell pepper, tobacco, and earthy tones.

Cabernet Sauvignon in blends and single varietals

In Bordeaux, Cabernet Sauvignon is rarely vinified on its own – it forms the backbone of great cuvées, blended with Merlot for body and Cabernet Franc for finesse. Winemakers worldwide have adopted this principle. However, when vinified as a single varietal, it shows its full potential primarily in California and Tuscany, where the warm climate ensures complete ripening.

Our highlights: From entry-level to iconic

At Vinoscout you'll find Cabernet Sauvignon in every price range – from €2.70 to collector's items for up to €1,089 . Our best-selling wines include true legends:

  • Sassicaia Bolgheri Superiore DOC from Tenuta San Guido (€299.00) – the ancestor of the Super Toscani, a wine of worldwide renown from Bolgheri
  • Tignanello Toscana from Antinori (149.00 euros) – a Tuscan classic that combines Cabernet Sauvignon with Sangiovese
  • Tenuta dell'Ornellaia Le Volte (€25.90) – the accessible entry into the Ornellaia world, complex yet suitable for everyday use
  • Markus Schneider Black Print (15.90 euros) and Ursprung (10.50 euros) – two Palatinate wines proving that Germany has long been a player in the Cabernet Sauvignon market.
  • Aliestre ONE Red from the Alentejo (10.99 euros) – sun-ripened fruit from Portugal at an unbeatable price

Food pairing suggestions: What goes well with Cabernet Sauvignon?

The robust tannin structure of Cabernet Sauvignon makes it the ideal companion for protein-rich dishes. It pairs best with:

  • Grilled beef – ribeye, entrecôte or a classic steak from the grill
  • Braised lamb with herbs of Provence
  • Mature hard cheeses such as Manchego or Aged Cheddar
  • Game dishes such as venison roast or wild boar ragout
  • Dark chocolate with a high cocoa content – a surprisingly harmonious duo
