
Don Camillo Sangiovese Terre di Chieti
Don Camillo Sangiovese from the Abruzzo IGT Terre di Chieti – a red wine that shows what southern Italy has to offer beyond the major denominations.
The blend consists of 85% Sangiovese and 15% Cabernet Sauvignon. After maceration, 10% of the juice is drawn off (saignée method), which increases concentration and color depth. Temperature-controlled fermentation with selected yeasts lasts approximately three weeks, with regular pump-overs for color extraction. This is followed by malolactic fermentation and six months of aging in barriques – 30% French, 50% American, and 20% Caucasian oak. A further six months of bottle aging precedes release.
In the glass: dark purplish-red with violet reflections. The nose reveals ripe dark berries, cinnamon, vanilla, and a hint of green bell pepper. On the palate, powerful yet smooth – velvety tannins, a fruity core, and a long, warm finish.
Serving temperature 16–18 °C. Pairs well with pasta al ragù, grilled lamb or spicy pecorino cheese.
