Origin and production
Champagne is located in northeastern France and is considered one of the northernmost wine regions in Europe. The cool climate ensures high acidity in the grapes – the foundation for freshness and longevity. The most important grape varieties are Chardonnay, Pinot Noir, and Pinot Meunier.
The heart of production is bottle fermentation: After the first fermentation, a mixture of wine and sugar (Liqueur de Tirage) is added to the base wine, the bottle is sealed – and the second fermentation creates the characteristic bubbles directly in the glass. Subsequently, the bottles mature on the lees before they are riddled, disgorged, and adjusted to their final taste with the dosage – a small amount of sugar.
