How Non-Alcoholic Wine is Made

It always starts with a real wine: grapes are harvested, fermented, and aged like any other wine. Only afterwards is the alcohol gently removed, usually by vacuum distillation at low temperatures or via the spinning cone process, which separates the aromas before the removal and subsequently returns them. In Germany, the result can be called non-alcoholic if at most 0.5% vol. remains – about as much as in a ripe banana or a glass of grape juice.

What You Can Expect in Terms of Taste

Alcohol brings body, warmth, and sweetness into the glass. If it is missing, fruit and acidity stand out more – which is why aromatic, fresh grape varieties succeed particularly well. Riesling, Sauvignon Blanc, and Rosé are the safe entry points; non-alcoholic sparkling wine and Secco additionally benefit from the carbon dioxide, which provides structure. Serve non-alcoholic wine slightly cooler than its alcoholic counterpart – white wine and rosé well-chilled, sparkling wine ice-cold, red wine slightly tempered. A wine glass with some room at the top allows the aromas to work better than a narrow water glass. And a tip from the kitchen: non-alcoholic wine goes excellently with dishes with acidity and freshness, such as salads, fish, Asian cuisine, or goat cheese.
