The ingredient list reads like a small journey: fully ripe quinces, sweet-tart kumquats from the Greek island of Corfu, French bitter oranges, and apricots. German blossom honey provides fullness in the mouth and carries the finish, while the acidity of the bitter oranges keeps the sweetness in balance.

On the nose, subtle ripe mango is in the foreground. On the palate, tart quince and the citrus freshness of the kumquat meet the soft sweetness of the apricot. The honey gives the drink body and a long, elegant finish.

Serve it well-chilled at about 8 °C. It pairs well with dessert, mature Comté or fresh goat cheese with a spoonful of honey, and an apricot tart.
