Production: Tradition in the bottle
In the Méthode Traditionnelle, a dosage of sugar and yeast is added to the base wine before the bottle is sealed. The second fermentation takes place directly in the bottle – CO₂ cannot escape and dissolves in the wine. After a maturation period on the lees, the so-called yeast aging, the sediment is removed by riddling and disgorging. This elaborate process is legally required and guarantees the typical quality of Crémant.
