Origin and production – what makes whisky whisky
The base of every whisky is grain. Barley, corn, rye, and wheat are the classic raw materials, but oats, spelt, millet, or buckwheat also find their way into the still. The process begins with malting: The grain is made to germinate in order to convert starch into fermentable sugar. During the subsequent mashing, hot water is added – and here the quality of the water plays a decisive role. The pH value and mineral content noticeably influence the fermentation, which is why many distilleries consciously rely on their local water source.
After fermentation with special yeasts, the mash is distilled and then stored in wooden barrels. Barrel maturation is the key to character: Ex-bourbon barrels bring vanilla and coconut, sherry barrels give dried fruits and chocolate, port wine barrels impart red berry fruit. Whether as a Single Malt – from a single distillery – or as a Blend, which combines the strengths of several whiskies: Both forms have their justification and their loyal followers.
