What makes Cognac so special
Cognac is no ordinary wine spirit. It carries a protected designation of origin – only what is produced in the region around the city of the same name in southwestern France may call itself that. This is not mere bureaucracy, but a promise: of quality, of tradition, and of an unmistakable character.
In the glass, Cognac is multi-layered and versatile. Depending on age and origin, you will encounter:

Origin and production
The Cognac region is located in the Charente department and benefits from a mild, Atlantic-influenced climate. Predominantly white grape varieties grow here – above all the Ugni Blanc (known in Italy as Trebbiano) – which result in an acidic, light wine. This wine is not very spectacular for direct consumption, but almost ideal as a basis for distillation.
The must is first fermented into wine and then distilled twice in copper pot stills. The result is a clear, high-proof distillate that then matures in oak barrels – traditionally from the Limousin or the Tronçais forest. During this maturation, the Cognac takes on color, structure, and complexity. Water and alcohol evaporate slowly – the so-called "angel's share" – and the wine spirit becomes rounder and deeper with every year.
The quality levels give you an initial orientation:
- VS (Very Special) – at least two years of barrel storage, fruity and direct
- VSOP (Very Superior Old Pale) – at least four years, more complexity and elegance
- XO (Extra Old) – at least ten years, profound, rich, and long-lasting in the finish
For which occasions is Cognac suitable?
Cognac is more versatile than its noble image might suggest. Of course, it is excellent as a digestif after a festive meal – neat, in a bulbous snifter, at room temperature. But that is by no means all:
