What is a fruit brandy – and what makes it special?
A fruit brandy is a spirit distilled exclusively from fermented fruit. A minimum alcohol content of 37.5% vol. is legally required – however, most high-quality products are between 40 and 45% vol., sometimes even higher. Furthermore, it is crucial that the fruits used must be stated on the label in the order of their quantity. Transparency is mandatory here, not optional.
What distinguishes a real fruit brandy from an ordinary fruit spirit is the purity of the raw material. Only ripe, aromatically complete fruits provide the potential for a great brandy. Nothing from the outside – everything that ends up in the glass was previously inside the fruit.
The most important styles at a glance
Williams Christ (Williams pear)
Probably the best-known fruit brandy of all. The Williams pear brings an unmistakable, floral-sweet aroma that seems almost perfume-like in the distillate – and yet is dry and clear on the finish. A good Williams is the benchmark against which many distillers must measure themselves.
Kirschwasser (Cherry brandy)
Distilled from fermented sweet or sour cherries, Kirschwasser is a classic of the Black Forest and Swiss distilling tradition. The character is dry, slightly almond-like, and marked by a fine bitterness – no comparison to sweet cherry liqueurs.
Marillenbrand (Apricot brandy)
The apricot is the queen of Austrian distilling art. Its brandy smells of ripe apricots, peach, and a hint of almond. Good apricot brandies from the Wachau or Burgenland are among the most complex fruit distillates Europe has to offer.
Zwetschgenbrand (Plum brandy) & other varieties
Plum, apple, quince, mirabelle – the spectrum is large. Plum brandies impress with spicy depth and a slightly plum-like melt. Apple brandies, on the other hand, often seem fresher and lighter, ideal for getting started with the topic.
Production: From the orchard to the glass
The path to the finished fruit brandy begins with the harvest of ripe fruit. These are first mashed – i.e., crushed and mixed with water. Subsequently, alcoholic fermentation begins, during which special yeasts convert the fruit sugar into alcohol. This process takes several days to weeks, depending on the fruit and temperature.
The finished mash is then distilled in a pot still – usually twice to optimize purity and aroma. In doing so, the distiller carefully separates the heads, hearts, and tails. Only the middle cut, the so-called heart, goes into the bottle. Many fruit brandies are then brought to drinking strength with soft spring water and rest briefly before being bottled.
For which occasions is fruit brandy suitable?
- After a meal: The classic digestif – a small glass of Williams or apricot brandy rounds off a good menu better than any espresso.
- With a cheese platter: Kirschwasser harmonizes wonderfully with strong mountain cheeses and aged hard cheese.
- In the kitchen: Fruit brandies are indispensable for desserts, sauces, and marinades – a dash of Williams in pear tart dough makes all the difference.
- As a gift: A high-quality bottle of fruit brandy is a gift with character – for connoisseurs who truly appreciate spirits.
- Neat, slightly chilled: In a tulip-shaped glass, at about 14–16 °C – this is how the aroma unfolds best.
