What is a fruit brandy – and what makes it special?

Fruit brandy is a spirit distilled exclusively from fermented fruit. A minimum alcohol content of 37.5% ABV is legally required – however, most high-quality products range between 40 and 45% ABV, sometimes even higher. Crucially, the fruits used must be listed on the label in descending order of quantity. Transparency is therefore mandatory, not optional.

What distinguishes a true fruit brandy from an ordinary fruit spirit is the purity of the raw material . Only ripe, aromatically complete fruits have the potential to produce a great brandy. No added sugar, no external flavoring – everything that ends up in the glass was originally in the fruit.

Williams Christ (Williams pear)

Arguably the most famous fruit brandy of all. The Williams pear imparts a distinctive, floral-sweet aroma that comes across almost like perfume in the distillate – yet it finishes dry and clean. A good Williams pear brandy is the benchmark against which many distillers are measured.

Kirschwasser

Production: From the orchard to the glass

The journey to the finished fruit brandy begins with the harvest of ripe fruit. This is first mashed – that is, crushed and mixed with water. Then alcoholic fermentation begins, in which special yeasts convert the fruit sugar into alcohol. This process takes several days to weeks, depending on the type of fruit and the temperature.

The finished mash is then distilled in a pot still – usually twice to optimize purity and aroma. The distiller carefully separates the heads, hearts, and tails. Only the hearts, the so-called " heart ," are bottled. Many fruit brandies are then diluted with soft spring water to drinking strength and left to rest briefly before bottling.
