The Dalmore Highland Single Malt 12 Years
The Dalmore 12 is a classic Highland single malt that derives its character from two different cask types: first, maturation in used American white oak bourbon barrels, then a finish in Oloroso sherry casks. It is precisely this two-stage process that makes it so interesting.
The Dalmore Distillery has been operating on the Cromarty Firth coast in the Scottish Highlands since 1839. The distillery is known for its consistent use of sherry casks and for whiskies with a significantly more mature character than their age would suggest.
In the glass, the 12-year-old displays a deep mahogany color. The nose offers orange zest, Christmas spices, and caramel—the hallmarks of Oloroso. On the palate, dark chocolate, dried figs, and a hint of walnut follow, carried by a soft, almost creamy texture. The finish is warm, medium-long, with a touch of spice.
Neat at room temperature, it reveals its full potential—no ice to mask the aromas. If desired, add a single drop of water. A convincing introduction to the sherry-style whisky segment, and equally enjoyable as an evening whisky by the fireside.
