Dalmore is located on the banks of the Cromarty Firth in the Scottish Highlands — not on Islay, as the name might sometimes suggest, but in the Northern Highlands, where the climate steers the maturation in its own direction. The distillery has been producing single malt here since 1839, focusing on patience: long maturation periods, carefully selected casks, and no compromises in aging.
The heart of the Dalmore philosophy is the work with sherry casks. Oloroso and Apostoles casks from Jerez, some seasoned for decades, give the whiskies their characteristic warmth: dried fig, orange peel, a hint of dark chocolate, and cinnamon on the finish. Not an intrusive sweetness, but a calm, multi-layered depth that only unfolds with time in the glass.
Dalmore is not a whisky for a quick evening — but for the moment when you consciously take time for yourself. Neat, with a drop of water, or with a piece of aged hard cheese and dark chocolate.
