Dalmore Distillery —
Sherry aging on the Cromarty Firth
Dalmore lies on the banks of the Cromarty Firth, where the Scottish Highlands meet the water. For generations, the distillery has been producing single malt with a consistency rarely found: no trends, no compromises – just whisky that stays in the cask as long as it needs.
The heart of Dalmore lies in its cask selection. Carefully curated sherry casks —often from Oloroso or Apostoles—give the whiskies their characteristic depth: dried figs, dark chocolate, a hint of cinnamon and orange peel. Maturation here doesn't last months, but decades. The result is a style that is complex without being overwhelming.
Dalmore is not a whisky for a quick sip. It's perfect for a quiet evening, neat or with a drop of water — and pairs well with dark chocolate or a strong blue cheese that complements the sweetness of the wood.
