Balvenie is one of the few distilleries in Scotland that still truly controls its whisky production from start to finish: its own maltings, its own copper pot stills, its own cooperage. What elsewhere has long since been outsourced remains under one roof in Dufftown – and has done so since 1892, when William Grant founded the distillery in the heart of Speyside.
This control over every step of the process is not an end in itself. It shapes the style: smooth on the palate, complex as it develops, with a lingering warmth resulting from slow maturation and careful cask selection. The DoubleWood matures first in American bourbon barrels before being transferred to Oloroso sherry casks – hence the characteristic notes of honey, vanilla, and dried fruit. The single-barrel bottlings take this a step further: each cask has its own distinct character, each bottle is numbered.
Those who drink Balvenie neat are advised to add a drop of water – this opens up the aromas. When serving it with food, it pairs well with mature hard cheese, dark chocolate, or a piece of smoked salmon.
