From grape supplier to the driving force of the new Languedoc

The history of Domaines Paul Mas begins in 1892, when great-grandfather Auguste Mas bought around nine hectares of vines near Montagnac in the Hérault. For three generations, the family sold the majority of their harvest to other wineries. Jean-Claude Mas, born into the world of wine in the fourth generation, broke this pattern: after studying economics and spending his first years in the wine import industry in England and the USA, he returned to the Languedoc and founded Domaines Paul Mas in 2000 — named after his father. The historic heart of the estate is Château Paul Mas in the hamlet of Île de Conas near Pézenas, where the family still lives and works today.

What began as a manageable family estate grew into one of the best-known wineries in the south of France. Today, Domaines Paul Mas comprises 17 estates covering around 940 hectares of owned land, spread across the most important sites of the Languedoc and Roussillon: Pézenas, Grès de Montpellier, Terrasses du Larzac, Limoux, Boutenac, and Roussillon. The wines are exported to over 80 countries.

Living soils instead of a checklist: Sustainability as an attitude

Chemical pesticides are prohibited on all estates. 100% of the vineyards carry the HVE3 certification (Haute Valeur Environnementale, level 3), 40% are additionally organically certified — and a large part of the remaining areas is managed according to the same principles without having applied for formal certification. In addition, there is the Terra Vitis label, which sets even stricter requirements for sustainable viticulture. Jean-Claude Mas puts it directly: for him, ecological viticulture is a value, not a sales argument.

In practice, this means: biocontrol solutions instead of herbicides, a targeted pruning philosophy to reduce tractor passes, the promotion of soil biology, and beehives in the vineyard to strengthen biodiversity. For partner winemakers who supply fruit for the Signatures line, a separate set of sustainability rules applies — with training and fair purchase prices as an incentive for conversion. Luxe Rural: Terroir character without an elite price tag

Jean-Claude Mas has condensed the program of the Domaines into one term: Luxe Rural — rural luxury that brings together origin, craftsmanship, and drinking pleasure without becoming elitist. The range is deliberately broad: from accessible IGP Pays d'Oc wines like Chardonnay or Cabernet Sauvignon to ambitious single-vineyard wines from the Pézenas and Terrasses du Larzac appellations. In the cellar, classic techniques meet targeted innovation — including sulfur-free wines, which Jean-Claude Mas has been working on for more than a decade.

Stylistically, the whites stand for freshness and depth of fruit: the Viognier brings the aromatic opulence of the southern French sun, the Chardonnay — depending on the aging stage — creamy texture or clear minerality. The reds, whether Cabernet Sauvignon, Merlot, or Syrah, are fruit-driven and accessible, with gentle use of wood. What connects all bottles: they tell the story of a region that was long underestimated — and today confidently shows what the Languedoc is truly capable of.
