Origin and production – what makes these sparkling wines special
Classic bottle fermentation – also called Méthode Traditionnelle or Méthode Classique – is the heart of many of our sparkling wines. The wine ferments a second time directly in the bottle, which leads to a particularly fine, persistent perlage and complex yeast aromas. Cava, Franciacorta, and Cap Classique follow this principle.
The Pétillant Naturel, on the other hand, takes a different path: fermentation is completed in the bottle before all the sugar has fermented – the result is a naturally sparkling wine with a lively, often slightly rustic personality. Particularly popular with natural wine lovers.
With the Charmat method (tank fermentation), the carbon dioxide is created in a pressure tank – faster, fruitier, more accessible. Many Spumante and light sparkling wines from various countries use this path.
