Blanquette de Limoux is considered one of the oldest sparkling wines in France—the monks of Saint-Hilaire Abbey are said to have developed the traditional method of bottle fermentation here as early as 1531, around 100 years before Champagne. Sieur d'Arques, the leading cooperative of the appellation, carries on this history in its cuvée name.
In the glass, the wine displays a pale yellow color with green reflections; the perlage is fine and persistent. The nose is dominated by the indigenous Mauzac grape variety: white blossoms, pear, a hint of quince, and the typical herbaceous Mediterranean garrigue notes. On the palate, it is soft and velvety on the attack, with fresh acidity, ripe white fruit, and a lovely finish.
Ideal as an aperitif, with goat cheese from the Languedoc region, or with light fish dishes. Serving temperature: 7–9 °C.
