The Bouvet Ladubay Excellence Brut from the Loire Valley makes a good starting point: ripe apple fruit, a light smoky note, creamy bubbles—chosen by the wine industry as Crémant of the Year nine times in a row, which speaks to consistency, not chance. For those who prefer something a bit more complex, there's the Grand Cuvée 1531 de Aimery Crémant Brut de Limoux from Sieur d'Arques: Limoux is considered the cradle of bottle fermentation—the monks there were already experimenting with it in 1531, before Champagne was even a thing. Twelve months of lees aging bring green apple, ripe pear, and a hint of honey to the glass; the bubbles are fine and persistent. Burgundian elegance is delivered by the Crémant de Bourgogne Tastevinage from Veuve Ambal: The Tastevinage seal is not a marketing award, but the result of a blind tasting by the Confrérie des Chevaliers du Tastevin — Chardonnay with toasted bread structure and white blossoms, just right for meaty oysters like Gillardeau.
