A sparkling wine from Veneto, whose extra-dry dosage places it between an aperitif and a dessert wine pairing. Valdo is one of the established wineries in Valdobbiadene — the home of Prosecco — and vinifies Aquarius as a single-varietal Blanc de Blancs from white grapes.
In the glass, it appears bright and sparkling: aromas of pear, white peach, and a hint of acacia blossom. The Extra Dry category signifies a residual sugar content between 12 and 17 g/l—noticeably softer than Brut, but without the heaviness. The perlage is fine and persistent, the finish fruity and fresh.
Serve well chilled at 6–8 °C as an aperitif, with light antipasti, shrimp, or fresh fruit tarts. If you're looking for a Prosecco-like character with a touch more richness, this is the one for you.
