Not a wine in the classical sense — and that's precisely what makes it interesting. The Apple Symphony from Jörg Geiger's manufactory is a naturally cloudy sparkling apple wine made from old orchard varieties of the Swabian Alb, vinified using traditional methods like a wine.
Jörg Geiger, based in Schlat near Göppingen, specializes in processing heritage apple varieties—varieties that would have no chance in the supermarket, but offer far more in terms of flavor than mass-produced apples. His ApfelSinfonie (Apple Symphony) is aged in barriques, giving it a depth rarely expected in sparkling apple wine.
In the glass, it reveals a fully ripe apple aroma with a spicy wood note from the barrique barrel and earthy hints of mustard leaves. On the palate, it is juicy and acidic, with delicate caramel notes and a long, slightly spicy herbal finish.
