Jörg Geiger from Schlat in Swabia specializes in the refinement of old fruit varieties. His focus is on the Boskoop apple , a historic variety with pronounced acidity, combined with raspberry and rose aromas to create a handcrafted, alcohol-free sparkling wine.
On the nose, the rosé opens with rose petals and fresh raspberry, underpinned by a light hint of chocolate mint and a subtle, almost oriental spice. On the palate, a gently sweet opening follows, before the lively acidity of the Boskoop grape takes over, providing freshness. The finish is spicy and lingering—not a brief fade, but a long aftertaste.
Serving suggestion: Well chilled at 6–8 °C. Suitable as an aperitif, with light summer dishes, goat cheese or fresh berry desserts — and is a serious option for non-alcoholic accompaniment to multi-course meals.
