Parellada is one of the three classic grape varieties from which Spanish Cava is traditionally made – and at the same time one of the most unknown white varieties of all. Anyone who has once had it as a still wine in the glass remembers its reserved, almost delicate nature: light, fresh, with a fine floral note and pleasant acidity that never seems intrusive. Not a wine that wants to impress with power and fullness, but one that is simply fun – uncomplicated, honest, and easy to drink.
At home in Catalonia
Parellada grows primarily in the cooler high altitudes of Catalonia, where it can unfold its natural freshness particularly well. It is therefore no coincidence that it is so firmly rooted in the Penedès – the heart of Cava production. Wineries like Torres have made the variety socially acceptable as a still wine, while it plays its classic role as a freshness provider in Cava.
