Its home is the "Sherry Triangle" around Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda in the south of Spain, with its bright white, lime-rich Albariza soils. Palomino Fino is used to create dry Sherry styles – from the pale, zesty Fino and Manzanilla to the powerful Amontillado and Oloroso.
The character is created less in the vineyard than in the cellar: during biological aging, a layer of living flor yeast protects the wine and makes it fresh and salty; during oxidative aging, it matures with exposure to air to achieve nutty depth.
