Don Zoilo Fino Sherry
Fino from Williams & Humbert, one of the great traditional bodegas in Jerez. The Don Zoilo matures organically under a layer of live yeast cultures – the so-called flor – which protects it from oxidation. The result is a straw-blond, dry sherry with a characteristic almond note, a delicate yeasty spiciness, and a salty, bone-dry finish.
Serving temperature: 7–9 °C, chilled. Once opened, drink within one to two weeks – Fino loses its freshness over time. Pairs well with Jamón Ibérico, fried prawns, Manzanilla olives, or mild Manchego cheese.
Williams & Humbert is one of the great names of Jerez – founded in 1877, it is today one of the most traditional houses in Andalusia. From its extensive bodegas in Jerez de la Frontera come sherries that cover the entire spectrum of the Solera system: from bone-dry Fino to dark, nutty Oloroso.
