Tio Pepe Palomino Fino

After harvesting, the grapes are gently pressed to obtain the particularly delicate mosto yema, the free-run juice. This must is then traditionally fermented, the young wines carefully racked, and fortified to an alcohol content of approximately 15% ABV before being transferred to Tio Pepe's own solera for an average of five years of aging. In the large 600-liter oak barrels, the wine develops a natural layer of yeast, about 1-2 cm thick, on its surface, known as flor. This layer seals the wine airtight throughout the entire aging process, simultaneously supplying it with essential nutrients and imparting its characteristic Fino bouquet and unmistakable, dry aromas. Color: bright, light gold. Aroma: unmistakably Tio Pepe! Fine and elegant with notes of fragrant, fresh white bread and delicate almonds. Taste: dry on the palate, yet with lively freshness and aromatic richness in the long finish.
