González Byass is one of the most influential names in the world of sherry. Since 1835, the family has been producing sherry at the southern tip of Spain, not far from the coastal city of Cádiz – now in its fourth and fifth generations. On approximately 800 hectares of vineyards in the Jerez region , they cultivate Palomino Fino and Pedro Ximénez, the classic sherry grapes, as well as international varieties such as Cabernet Sauvignon, Syrah, Merlot, and Tempranillo.
The heart of the winery is its sherry production: Fino, Amontillado, Oloroso – aged using the Solera system, in which older and younger vintages are blended together over decades. This craft, which demands patience and a precise understanding of oxidation and maturation, has been preserved almost nowhere in Jerez as consistently as here.
