Emilio Lustau is one of the most renowned bodegas in the Sherry Triangle – and has been for over a century. The house is located in the heart of Jerez de la Frontera, where the Albariza chalk soils drive the Palomino grape to a level of precision that hardly any other terroir in the world can match. Over 300 sunny days a year, combined with the humid Poniente wind from the Atlantic: this combination is the foundation for Sherries that are both vibrant and profound.
What distinguishes Lustau is the consistency in the Solera system. Decades-old barrels, carefully tended criaderas, and cellar staff who view patience as a craft principle. This results in an Amontillado with walnut and dry orange zest, a Pedro Ximénez of almost syrupy density with dates and dark chocolate – and the Manzanilla Papirusa, which, with its salty freshness and hint of chamomile, is reminiscent of a walk along the coast near Sanlúcar.
