Solera Familiar Palo Cortado Península

A Palo Cortado is the rarest category in the Sherry universe: wines that initially mature under flor as Fino, but then – for reasons not entirely clear – interrupt the biological aging process and continue to develop oxidatively. The result combines the elegance of an Amontillado with the power of an Oloroso.

This Solera Familiar Península matures for 12 years in the Solera system. The nose offers aromas of roasted hazelnut, vanilla, and a hint of tobacco – the oxidative character is pronounced but never heavy. On the palate, it is dry, with a spicy depth and a long, slightly smoky finish.

Serve neat at 14–16 °C, ideally in a white wine glass with a bowl. Pairs well with mature Manchego cheese, Jamón Ibérico, or hearty mushroom dishes.
