Corvina grows in the hills of Valpolicella in northeastern Italy, usually blended with Rondinella and Molinara. The special feature is the Appassimento method: for Amarone, the grapes are dried on racks for months after the harvest, which concentrates sugar and aromas – this creates a powerful, dry wine of enormous depth.
The Ripasso is stylistically in between: young Valpolicella is macerated on the still-warm Amarone pomace, thereby gaining body and spice. Thus, Corvina offers three levels – from light everyday wine to concentrated rarity.
Flavor profile: Sour cherry and almond
Varietal and young, Corvina shows bright aromas of sour cherry and red fruit with a typical note of bitter almond and herbs, carried by fresh acidity and medium body.
