Neropasso Rosso Veronese Mabis
A portion of the grapes for this wine is dried before they are pressed. This method is called the "Appassimento" method. It is a unique method that is characteristic of wine production from the Veneto region. The origin of this technique dates back to the distant past: the Roman era.
This requires the necessary experience for drying Neropasso grapes. The Appassimento method is essential for an excellent wine. It is a very critical and delicate phase during winemaking.
There must be perfect and healthy grape ripeness when the grapes are selected during the manual harvest. Only the thinnest grape bunches are chosen because the grapes are not too close to each other, allowing the air to circulate. The grapes are then placed in large, perforated plastic crates. In this way, optimal ventilation is ensured. The crates are then stacked in the "Fruttaio" – a large, airy room. The grapes are checked regularly so that the Appassimento takes place in exactly the right way.
The Neropasso Rosso Veneto has an intense, ruby red color. Spicy in the bouquet, with hints of black cherries and plum compote. Fine and silky on the palate, with soft tannins on the finish.

The Winery
Biscardo – more than a winery. A family that has lived, worked, and loved in the Valpolicella for over 140 years. Generation after generation with the same passion.
In the center: the Appassimento method. Harvested grapes are dried for weeks – water goes, concentration comes. The result: wines that taste deeper, fuller, more intense.
Their most famous wine, the Neropasso: powerful and harmonious, with dark fruits and velvety warmth. The Oropasso? Garganega meets Chardonnay – unusual, wonderful.
Here you will find wines with history. Of family, craftsmanship, and a region that produces the extraordinary.
