Biscardo Valpolicella Ripasso Classico Superiore DOC

This Valpolicella Ripasso Superiore from brothers Martin and Maurizio Biscardo is intense and displays a deep ruby ​​red color. The wine is made from the typical Veronese red grape varieties Corvina, Molinara, and Rondella. A Ripasso is produced by adding the sugary must a second time during the fermentation process. This gives the Ripasso all the characteristics of an Amarone, but not as opulent and profound. It is simpler and more approachable. The Biscardo Ripasso is aged for twelve months in 30-hectoliter Slavonian oak barrels, followed by a further six months of bottle aging in the estate's cellars before release. The bouquet of the Biscardo Valpolicella Ripasso Classico Superiore is rich and complex, with distinct notes of cherries and chocolate in the background.
