Amarone needs time – and Bolla takes it. The Classico from Valpolicella shows what happens when Corvina, Corvinone, and Rondinella are first dried on wooden racks and then aged for three years in Slavonian oak barrels.
Bolla is one of the oldest wine producers in the region, with roots in Soave and Valpolicella since the late 19th century. The Classico comes from the historical core area of Valpolicella – Negrar, Marano, Fumane – where the soils of limestone and clay give the wines a striking basic structure.
In the glass: dark ruby red with garnet nuances. On the nose, sour cherry, dried plum, and a hint of citrus peel, plus roasted aromas and dark chocolate from the long barrel storage. On the palate, full-bodied, with velvety tannin and a warm, long finish.
Serving temperature: 16–18 °C, ideally decant one hour before pouring.
Goes well with: braised beef shoulder, game ragù, risotto all'Amarone, or ripe Pecorino stagionato.

The Italian winery Bolla was founded in 1883 by Abele Bolla in northern Italy. His sons soon joined the business, assisting their father. During World War II, Abele Bolla's wines enjoyed considerable renown, which in 1946 enabled exports to America and the establishment of a local presence. The winery is located in the Veneto region and owns several vineyards where various grape varieties are cultivated. These include red varieties such as Merlot, Molinara, Corvina, and Rondella, as well as Cabernet Sauvignon. Bolla's white varieties include Garganega, Pinot Grigio, and Chardonnay. The winery also produces Prosecco.
