Origin & character
Xarello comes from Catalonia and has been rooted there for centuries, especially in the Penedès and the surrounding locations. The variety ripens late, forms thick berry skins and naturally brings high acidity as well as a powerful body – properties that make it the ideal basis for long-term Cavas. In the glass, Xarello shows aromas of green apple, quince and herbs, often accompanied by a slightly earthy, almost salty minerality. As a sparkling wine, especially in Gran Reserva bottlings with long yeast aging, the variety additionally develops fine brioche and almond notes. As a still white wine – as with the Clos Ancestral Blanco – the spicy, structured character emerges even more directly. Xarello is not a pleasing variety, but one with attitude: dry, precise, with real aging potential.
