Ripasso Valpolicella Torre d'Orti Valpolicella Classico Superiore D.O.C.

A Valpolicella with more weight than the base wine and more accessibility than an Amarone: The Torre d'Orti from Cavalchina shows dark cherry fruit with spicy depth.

The Azienda Agricola Cavalchina winery is located in the Veneto, in the Valpolicella Classico Superiore D.O.C. origin. The wine is created using the Ripasso method: The finished Valpolicella is added a second time to the pomace of the Amarone. This brings additional structure, body, and aromatic depth. The grape variety in focus is Corvina, which provides the region with its typical cherry fruit.

On the nose, black cherry dominates, accompanied by chocolate, almond, and a hint of licorice. On the palate, fresh cherry fruit meets riper tones of raisin, cinnamon, and plum. The wine is dry, full-bodied, and yet soft, with an alcohol content lower than that of an Amarone.

Recommendation: Serve it at 16–18 °C with braised beef dishes, pasta with ragù, grilled lamb, or mature hard cheese like Grana Padano.
