Who isn't familiar with the famous Valpolicella wines? Our "Ripensato" is a specialty from this region: it's made entirely from Corvina, the grape variety typical of Valpolicella. This wine represents a kind of link between Amarone and the regular red wine from the Valpolicella area. Amarone is a Valpolicella made from partially dried grapes. This means the grapes remain on the vine until fully ripe, then they are harvested and air-dried for several weeks before fermentation. During this process, they lose water, increasing the concentration of extract and sugar. Amarone is therefore a full-bodied, high-alcohol, powerful wine. In contrast, our "Ripensato" is made from grapes that are fermented normally and then left to macerate on the Amarone skins for several weeks after the Amarone has been racked. During this time, the wine absorbs extract from the Amarone pomace, developing those ripe, jammy notes that are typical of Amarone. The "Ripensato" is denser and richer than a normal red wine, possessing sweet tannins and more ripe fruit.
