Founded in 1969, it is owned by the state of Hesse, and the managing director is Dieter Greiner. Kloster Eberbach has a total vineyard area of 247 hectares, characterized by quartzite, loess, loam, and marl soils, as well as weathered slate. Among the grape varieties cultivated are Pinot Noir, Riesling, and Spätburgunder (Pinot Noir). The winery's best vineyard sites include Steinberg and Rauenthaler Baiken. Kloster Eberbach produces approximately 1.9 million bottles of wine annually.

Eberbach Monastery is one of Germany's most important wineries—not because of its size, but because of its history. The Steinberg, a single vineyard completely enclosed by monastery walls, and the Rauenthaler Baiken are known for their mineral depth, derived from quartzite, loess loam, and marl soils. This diversity of soils is reflected in the wines: precise acidity in the Riesling, elegance and substance in the Pinot Noir.
