Fantini »Three Dreamers« Montepulciano Appassimento 0.75L

The »Three Dreamers« shows what the Appassimento method can get out of Montepulciano: the grapes are withered on racks after the harvest, losing part of their water content and concentrating sugar, aromas, and structure in a way that would be hard to achieve with classic vinification. The result is a red wine with noticeable depth that still does not feel heavy.

A deep ruby red with violet reflections glows in the glass. The nose opens with dark cherry, blackberry, and ripe plum — followed by fine notes of cocoa, clove, and a hint of dried herbs. The density from the nose is confirmed on the palate: full-bodied, with a silky texture and well-integrated tannins. The Off-Dry style ensures that the wine does not stick despite its fullness — a subtle freshness keeps everything in balance. The finish is long, warm, and slightly spicy.

Serve it at 16–18 °C — it loses its aromatic breadth if too cold. At the table, it cuts a strong figure alongside braised beef or a lamb shank with rosemary. It also pairs well with pasta all'amatriciana, game ragù, or an aged Pecorino. Those who want to drink it pure should give it some time in the glass after opening.
