Dazu zählen deutsche Auslese, Beerenauslese und Trockenbeerenauslese, Sauternes aus Bordeaux und Tokaji aus Ungarn. Typisch sind Aprikose, Honig, Safran und kandierte Orange bei tragender Säure. Diese Weine reifen jahrzehntelang und passen zu Foie gras, Roquefort und reifem Steinobst.
