The Douro is one of the most demanding wine regions of all. The vines grow on steep slate, which stores heat and drains water quickly – stress that forces the grapes to form intense aromas. Indigenous grape varieties such as Touriga Nacional, Touriga Franca, Tinta Roriz, and others shape the unmistakable character of Port wine. The grapes are traditionally harvested by hand, as the steep slopes do not allow for machine harvesting. The addition of Aguardente to the fermenting must has been the method for centuries that makes Port wine what it is: a fortified wine with natural residual sweetness and long shelf life.
