The grapes for Taylor's Select Reserve Ruby are hand-harvested, mostly destemmed, and crushed in shallow stainless steel tanks. Instead of foot-tapping as in the past, the cap of skins is now regularly submerged using state-of-the-art equipment to extract maximum color, aroma, and flavor from the grapes and skins. This meticulous process has allowed Taylor's to maintain and even surpass its quality standards compared to traditional methods. The must is then fermented, and once approximately half the sugar has been converted into alcohol, the free juice is drawn off and wine distillate is added. This stops the fermentation, increases the alcohol content, and preserves a natural residual sweetness. The young wine then matures in large wooden casks with only moderate oxygen exchange, thus preserving its youthful "ruby" color and fruity aromas. After aging, selected wines are blended to create a final product. Colour: deep ruby red with garnet reflections. Aroma: of dark berries (blackberry, blackcurrant, elderberry) with a hint of licorice. Taste: lush, youthful, juicy cherry fruit on the palate, wonderfully supported by a well-balanced acidity.
