Osborne's Pedro Ximénez sherry appears in the glass with a dark mahogany brown color. On the palate, this sherry is sweet and velvety, revealing notes of raisins, figs, and dates. These fruity notes are underscored by hints of roasted coffee. After pressing and fermentation of the grape must in modern stainless steel tanks, the traditional aging of the wines begins in approximately 600-liter wooden casks. Before the wine enters the casks, it is fortified with clear brandy to an alcohol content of 17% ABV. At this alcohol concentration, the yeasts die and settle at the bottom of the fermentation tanks. The subsequent maturation takes place using the so-called "Solera system," named after the bottom row of casks in a pyramid-shaped barrel cellar. The amount of wine drawn from the Solera is replaced from the cask above, with the top row being replenished with fresh distillate. Over the years, the sherries are transferred from one cask to the next, thus preserving their typical character for decades.
