Color: Tan, dark amber with brick-red highlights. Aroma: Sweet and aromatic, with notes of preserved plums, honey, and numerous herbs, it is almost reminiscent of herbal liqueur – and Christmas, with vanilla, cinnamon, cloves, and coriander. Taste: The aromas of the bouquet are easily recognizable on the palate, dense and wonderfully balanced, interwoven with fruity acidity, nutty, and a very long finish. The grapes for the 10-year-old Taylor's Tawny are hand-harvested, mostly destemmed, and macerated in shallow stainless steel tanks. Instead of the traditional foot-stemming, state-of-the-art equipment is now used to regularly submerge the cap of skins and grape skins, extracting the maximum amount of color, aroma, and flavor. This meticulous processing has allowed Taylor's to maintain and even improve its quality standards compared to the traditional method. The must is then fermented, and after approximately half of the sugar has been converted into alcohol, the free juice is drawn off and wine distillate is added. This stops fermentation, increases the alcohol content, and preserves a natural residual sweetness. Over the winter, the wines mature in large casks in the upper Douro Valley before being transported to the port city of Vila Nova de Gaia, where they age for an average of 10 years in very old 630-liter wooden casks.
