Don Zoilo Pedro Ximenez Sherry

A Pedro Ximénez from Williams & Humbert – one of the oldest bodegas in Jerez, founded in 1877. This Don Zoilo PX displays a deep mahogany brown, almost black, color in the glass: the typical result of grapes that are dried on straw mats in the Andalusian sun after harvesting, before being pressed and fermented.

On the nose, roasted raisins, figs, a hint of dark chocolate, and coffee notes. On the palate, dense and viscous, with very low acidity and intense, lingering sweetness – the style is concentrated, deep, and warm. The finish lasts well over a minute.

Enjoy it on its own as a dessert, with blue cheeses like Valdéon or Cabrales, over vanilla ice cream, or with hazelnut pastries. It also makes a great base for a classic PX splash over Oloroso. Serving temperature: 12–14 °C.
