Don Zoilo Amontillado Sherry

Amontillado is the hybrid of sherry styles: it begins its life as a Fino under a layer of biological yeast (flor) until this breaks down and oxidative maturation takes over. The result is a wine with two faces – and that's precisely what makes the Don Zoilo Amontillado from Williams & Humbert so interesting.

In the glass, it shines a clear amber color. The nose reveals roasted hazelnut, a hint of Manzanilla saltiness from its Fino origin, and dried herbs. On the palate, it is dry, with lively acidity and a long, nutty-spicy finish.

Neat at 12–14 °C as an aperitif, with Jamón Ibérico, roasted almonds or strong Manchego cheese. Also a first choice as a cooking sherry for sauces and stews.
