Valdespino Contrabandista Sherry Amontillado Medium Dry

Contrabandista Amontillado is a blend in the style of a medium-dry sherry. It is made from the well-known Palomino grape variety, matured using the classic Amontillado method (biological and oxidative aging), and approximately 5% Pedro Ximénez, with 30 grams of residual sugar. It is aged for 18 years. Winemaking: The wine undergoes spontaneous fermentation in very old oak barrels. It then remains in this "sobretabla" (first fermentation cellar) for about a year until the alcohol content reaches approximately 12%, developing the characteristic flor (leaves) of sherry. Only then is the wine separated from the lees and fortified to 15% ABV with pure brandy before being transferred to the first level of the "criadera" (dry cellar). In the glass, it displays a mahogany color with light amber hues. The aroma reveals notes of dates and raisins, followed by a juicy, bittersweet vibrancy on the finish.
