Reserve Mouton Cadet Sauternes AOC

The raisin-like, shriveled grapes are hand-harvested in several passes to ensure that only those berries exhibiting optimal ripeness are picked. In the winery, the grapes are pressed very slowly and gently, and then the must is drawn off. Once the lees have settled naturally (sedimentation), alcoholic fermentation begins – however, this is stopped prematurely after just a few days to prevent all the sugar from converting into alcohol and to preserve the high residual sweetness characteristic of Sauternes. Aromas of spicy-sweet notes of quince jelly, honey, and fresh white fruits (vineyard peach, pear) are present. On the palate, it is smooth and beautifully balanced with a remarkable freshness that allows the fruity aromas to linger elegantly and for a long time on the finish.
