Reserve Mouton Cadet Sauternes AOC
The raisin-like, dried grapes are harvested by hand in several passes to pick only those berries that show an optimal degree of ripeness. In the winery, the grapes are pressed very slowly and carefully, and then the musts are drawn off. As soon as the lees have settled naturally (sedimentation), the alcoholic fermentation begins – which, however, is stopped prematurely after just a few days so that not all the sugar is converted into alcohol and the high residual sugar characteristic of Sauternes is preserved in the wine.
Spicy-sweet notes of quince jelly, honey, and fresh white fruits (vineyard peach, pear). Taste: gentle and beautifully balanced on the palate with a remarkable freshness that allows the fruity aromas to linger very elegantly and for a long time in the finish.
