Brut refers to sparkling wine with less than 12 grams of dosage per liter and is therefore the most popular style for Champagne, Sekt, Crémant, and Cava. The low residual sweetness allows the acidity and yeast notes to remain in the foreground.

Typical notes are citrus, green apple, brioche, and toasted almond – the longer the yeast aging, the more pronounced the baked note. Brut pairs well with an aperitif as well as with oysters, sushi, and fried fish, and remains drinkable throughout an entire meal.
