Luscious wines are created from grapes from which the noble rot Botrytis cinerea has extracted water. What remains is sugar, acidity, and aroma in high density. A multiple of the harvest is needed for one bottle, and it is picked berry by berry – which explains the effort and price level.

This includes German Auslese, Beerenauslese, and Trockenbeerenauslese, Sauternes from Bordeaux, and Tokaji from Hungary. Typical notes are apricot, honey, saffron, and candied orange with a supporting acidity. These wines age for decades and pair well with foie gras, Roquefort, and ripe stone fruit.
