When you think of rosé wine, the first thought might be mixing: simply pour red and white wine together, done. But that is a persistent misunderstanding. Real rosé is an independent type of wine with clear production rules, fascinating diversity, and a character that goes far beyond the image of "summer wine." How is rosé wine really made?

Rosé wine is obtained exclusively from red or blue grapes. The decisive difference to red wine lies in the contact with the grape skins. After the harvest, the berries are first freed from their stems and then pressed. The must then remains in contact with the skins for a limited time – often only a few hours. In this phase, the color pigments (anthocyanins) are released from the skins and give the wine its characteristic color, which can range from delicate salmon pink to bright raspberry red.

The two most important production methods at a glance:

  • Direct pressing (Pressage directe): The grapes are pressed immediately, the skin contact is minimal. The result is particularly light, elegant rosés – typical for Provence.
  • Saignée method (Bleeding): A part of the must is drawn off from the red wine batch before the full maceration begins. These rosés are often more color-intensive and aromatically stronger.

Only in a few exceptions – such as with rosé champagne – is the blending of red and white wine officially permitted and regulated.

Characters and styles: Rosé is not just rosé

The range is enormous. A Provençal rosé made from Grenache, Cinsault, and Mourvèdre appears as pale as salmon fillet, smells of white peach, citrus blossom, and a hint of garrigue – dry, fresh, immensely elegant. A rosé from the Palatinate, for example from Pinot Noir, brings more fruit, more body, sometimes a fine spice. Spanish rosados from Garnacha surprise with depth and berry intensity. And a rosé champagne or Crémant rosé plays in a league of its own: sparkling, complex, festive.

Basically, three styles can be distinguished:

  • Delicate and dry: Light color, fine fruit, high freshness – ideal as an aperitif or with light dishes.
  • Fruity and full-bodied: More intense color, ripe berry fruit, sometimes a hint of residual sweetness – versatile and accessible.
  • Complex and aged: Rare, but impressive – rosés with aging potential that tell more and more in the glass.

What does rosé wine go with?

Rosé is perhaps the most flexible wine at the table. It combines the freshness of white wine with the fruit and light structure of red wine – and thus builds bridges where other wines have to pass.

  • Mediterranean cuisine: Grilled vegetables, ratatouille, tapenade, goat cheese – a classic Provence rosé is at home here.
  • Fish and seafood: Shrimp, salmon, bouillabaisse – the freshness of the rosé wonderfully highlights the sea aromas.
  • Light meat: Grilled chicken, vitello tonnato, charcuterie platters – fruity rosés from Pinot Noir or Grenache are perfect companions.
