Kaiken Ultra Cabernet Sauvignon

For Montes Kaiken Ultra Cabernet Sauvignon, all grapes are carefully hand-harvested, brought to the winery, and initially cold-macerated for seven days (10°C). This is followed by a ten- to twelve-day alcoholic fermentation at controlled temperatures of 25 to 28°C. After fermentation is complete, the wines remain on the skins for another ten to fifteen days to extract intense color, aroma, and soft tannins. The wines are then racked and aged for one year, with 80% of the wine being aged in French oak barrels. The color of Kaiken Cabernet Sauvignon Ultra is a deep purple to ruby ​​red. The aroma is an elegant, varietal bouquet with intense, multi-layered aromas of ripe blackcurrants, cherries, dark chocolate, and spices. Its palate is full-bodied, ripe, with good structure and promising tannins that are both powerful and silky, blending harmoniously with the deep, elegant aromas of the Cabernet grapes (from old vines in the best parcels in Agrelo).
