Maison Castel Chablis

The extraordinary renown of Chablis wines is rooted in the excellent reputation of the Chardonnay grape from Burgundy. Thus, "Chablis" became synonymous with high-quality, extravagant wines. Viticulture in the Chablis region can be traced back to the 12th century with the founding of Pontigny Abbey. This ancient winemaking tradition likely explains the special harmony between the winemaking and the terroir. The soils for Maison Castel Chablis are calcareous Jurassic soils, which impart a characteristic minerality. The color of La Sereine is a pale, pure golden yellow. Its aromas are fresh, reminiscent of citrus fruits and stone fruits such as pear and honeydew melon. These same aromas are noticeable on the palate, underscored by its minerality and fine acidity. An attractive Chablis with good length. After gentle pressing, a short maceration takes place before fermentation. Fermentation then takes place in stainless steel tanks at a moderate temperature. Aging on the lees, along with the so-called "bâtonnage" (stirring of the lees), ensures the elegance and minerality of the Chardonnay.
